I co-founded and run a Japanese-Mexican fusion restaurant, and I own the P&L end to end — weekly labour and food cost, menu margin by dish, cash flow, supplier pricing and promotion performance. Every model the business runs on, I built: recipe costing down to ingredient level, a weekly labour dashboard fed automatically from our rostering system, a 13-week cash flow, and a budget vs actual pack I review every Monday. This is why my spreadsheets are built the way they are. I have to use them at 6am on a Saturday, not present them.

Hotel food and beverage across restaurant, bar, banquets and events. Forecast covers and revenue against occupancy, costed function and event packages, and reconciled event P&Ls after the fact. Hotel finance is where I learned budgeting discipline properly: driver-based forecasts, month-end variance analysis, and having to defend a number to a financial controller who has already read the file. It is the reason I build models with a checks tab and no hardcoded numbers.
