Following my formal training, I spent three years working alongside clinical herbalists across Reading and London, practising within traditional herbal clinic settings. There, I formulated remedies, conducted consultations, and prepared medicines from raw plant material. It was exacting, hands-on work—the sort that sharpens instinct as much as it builds knowledge. In 2022, I relocated to the United States, settling in Sandpoint, Idaho. I apprenticed under two practising herbalists before moving into clinical work alongside them. During this time, I also taught within local homesteading communities—focusing on medicine making, seasonal protocols for family health, and the integration of medicinal plants into daily nutrition, rather than reserving them for moments of crisis. Before entering herbal medicine, I worked as a head chef in California. That experience proved quietly foundational. It shaped how I approach food as medicine in practical terms—recipe formulation, flavour, and the underlying biochemistry of how we eat: nutrient synergy, bioavailability, and the often-overlooked role of antinutrients. My clinical focus is autoimmune and chronic disease, particularly in older populations. I live with Susac’s syndrome, type 1 diabetes, and coeliac disease. This is not incidental to my work; it is the reason it is done with precision. Healing Evergreen was founded on the belief that this standard of guidance should not be limited to private clinical settings, but made accessible to those who seek to understand their health more deeply.
