Which Pokémons can I choose?

You can choose every Pokémon sprite between the 1st and the 5th Generation. In fact, after Generaton 6, the models became 3D, so there isn't a sprite for them. Depending on the package, you'll be able to choose up to 2, 4 or 6 Pokémon sprite.

Can I ask for special features to be included?

Of course. You can ask for a specific type combination, a color palette, and you can even give it a name.
